Mom's Onion Rice

This recipe is probably my most favorite way to eat rice. My Mom knew it was my favorite and made it often when I was home from school. I made it the other night and I couldn't help thinking about her the whole time. Miss you, Mom!!

Mom's Onion Rice

Ingredients:

3-4 tbls. of margarine
1 cup rice
1 chopped onion
2 cups water
1 chicken bouillon cube

Instructions:

Melt the margarine in a skillet. Brown the rice and chopped onion together. Add water and bouillon cube. Bring to a boil. Cover and cook until rice is tender.

This rice is perfect with chicken and a green veggie.
